Add the flour, sugar, baking powder and salt into a bowl and stir
In a separate bowl, add the milk of choice, apple cider vinegar and vanilla extract and stir well.
Add the liquid to to the dry ingredients and whisk until the mixture is smooth and then leave to rest for 5 minutes
In a non-stick pan, pour in some of the mixture on medium heat.
When the top of the pancake starts to thicken and bubble, flip the pancake and cook until golden brown and cooked through
Repeat steps until the mixture has been used up. Add maple syrup to serve and enjoy
