For our dessert we start off by making the McDougalls chocolate cookie dough and cooking until well-cooked, these will need to cool and then be broken down in a food processor to form a crumb.
Now we will need to zest our orange then segment leaving the segments to one side, add the remaining orange and half the zest to a saucepan.
Add the cardamom seed and orange jelly to the pan and bring to a boil. Strain and pour into a tub, leave to cool.
Once the jelly is cool refrigerate and set 1/3 of the jelly liquid and cut into cubes.
For the cream cheese mixture add the rose water, cream cheese, orange zest, half the honey and 1/3 jelly mix to a mixing bowl and beat together, leave in the fridge to infuse and slightly set.
Building the dessert, put ½ the chocolate crumble into a bowl and add a little oil, mix to make the crumbs look like soil and sprinkle a line along the plate.
Now remove the set cream cheese mix and take a scoop of the mixture with a hot ice cream scoop, roll into un oiled chocolate crumble and place in the middle of the plate.
Arrange the orange segments around the dessert, along with mint leaves and Nasturtium petals.
Finish the dessert with the jelly cubes, honey drizzle and serve.
