Gold Cheesecake with Chocolate Hazelnut Strawberries, Ruby Soil and Caramel SauceDownload

To make the Gold topping for the New York Style Cheesecake, place all the ingredients into a microwaveable bowl and heat for 20 seconds at a time until you have a smooth creamy Gold sauce, pour all over the top of the cheesecake allowing to dribble down the sides. Place in refrigerator and allow to cool and set.
For the ruby soil, place the water and caster sugar into a heavy bottom pan and heat to 130C, take off the heat and with a whisk stir in the Ruby callets, make sure all sugar coats the chocolate and stir for approx. 2 mins. Pour into a container and allow to cool.
To serve, place a dollop of Caramel Gourmet sauce onto serving plate and sweep across with a pallet knife, place the Gold topped Cheesecake onto the teardrop sweep and make a line across the plate with Ruby Soil, then place whole strawberries standing on there ends around the cheesecake as garnish, drizzle a little of the Chocolate Hazelnut sauce onto each strawberry and allow to run the strawberries, serve immediately.
